I'm a proud Dubliner who developed a love for wine during my BA in Culinary Arts at Technological University, where an alluring wine studies module sparked my interest in wine, so much so that my dissertation topic focused on botrytis cinerea and its use in wine making. After embarking on my WSET as a hobby, I realised my passion for all things wine and decided to begin my career in the drinks industry. Currently, I work as a freelance wine consultant, educator, host and communicator. Additionally, I am the chairperson of Wine Spirit Women, a grassroots organisation for women working in the drinks trade in Ireland. I  regularly write a wine-focused Substack and share my insights and wine adventures on Instagram.

Champagne Quick Fire

What is your most memorable Champagne moment?

In June 2024, I was accepted into the Champagne Academy. This was undoubtedly the most amazing week of my professional career, and I feel so privileged to be a part of the academy. The course is an incredible opportunity to go behind the scenes in the world's most revered Grandes Marques and gain an education like no other. My favourite part of my work is sharing the wines and stories of these fantastic Maisons, and taking people on a journey to fall in love with Champagne. Over 300 years ago, my ancestors left the Champagne region and settled in Ireland, and I like to think that my love for Champagne is truly in my DNA, not just on my palate. Since 2023, I have been taking an annual trip to Champagne, and with each visit, I find the region more fascinating and exciting than ever.

How did you start your career in Wine & Champagne?

My wine journey continued during my MSc in Insight and Innovation from Dublin City University, where I wrote my dissertation on the role of sustainability and innovation in winemaking. In 2022, I was awarded a scholarship to attend the MAD Academy in Copenhagen, where I completed a course in Environment and Sustainability. The MAD Academy is a school set up by Noma founder René Redzepi to train hospitality professionals from around the world.
